This Chicken and Spinach Lasagna is a delightful blend of flavors, featuring tender chunks of rotisserie chicken and creamy white sauce layered with pasta. Perfect for a quick dinner or a satisfying family meal, it is both comforting and easy to prepare.

- 1.5 cups of white sauce
- 4 lasagna noodles
- 1/3 ricotta mixture
- 1/3 rotisserie chicken
- 1/3 mozzarella cheese
- 1/3 Parmesan cheese
- 3 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic
- 1/4 cup all-purpose flour
- 2 cups chicken stock
- 1 cup half-and-half
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 1/4 teaspoon nutmeg
- 1 teaspoon Italian seasoning
- 1 cup thawed spinach
- 1 egg
Instructions
- Preheat the oven to 375˚F and grease a deep 9×13 pan with butter or non-stick spray.
- Melt butter in a deep skillet over medium-low heat.
- Add olive oil and garlic, and cook until softened, about 2-3 minutes.
- Sprinkle flour over the mixture and cook for 2-3 minutes, whisking often.
- Slowly whisk in chicken stock, then half-and-half, along with salt, pepper, nutmeg, and Italian seasoning. Stir well.
- Increase heat to medium-high and bring to a low boil for 1 minute while stirring frequently.
- Simmer the sauce on medium-low for 3-4 minutes, stirring constantly, then remove from heat and stir in Parmesan until melted.
- In a medium bowl, combine thawed spinach, ricotta, egg, and dried Italian seasoning and mix until well combined.
- To assemble the lasagna, spread 1.5 cups of white sauce on the bottom of the casserole dish.
- Layer with 4 lasagna noodles, then 1/3 of ricotta mixture, 1/3 of chicken, 1/3 of mozzarella, and 1/3 of Parmesan cheese.
- Repeat for a second layer with another 1.5 cups of white sauce, 4 noodles, 1/3 of each of the remaining ingredients.
- For the third layer, again add 1.5 cups of white sauce, 4 noodles, and the remaining 1/3 of each ingredient.
- Cover tightly with foil (spraying the underside with cooking spray) and bake for 35 minutes.
- Remove the foil and bake for an additional 15-25 minutes until cheese is melted and lightly browned.
