Description

This Chicken and Spinach Lasagna is a delightful blend of flavors, featuring tender chunks of rotisserie chicken and creamy white sauce layered with pasta. Perfect for a quick dinner or a satisfying family meal, it is both comforting and easy to prepare.


Ingredients

  • 1.5 cups of white sauce
  • 4 lasagna noodles
  • 1/3 ricotta mixture
  • 1/3 rotisserie chicken
  • 1/3 mozzarella cheese
  • 1/3 Parmesan cheese
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1/4 cup all-purpose flour
  • 2 cups chicken stock
  • 1 cup half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 1/4 teaspoon nutmeg
  • 1 teaspoon Italian seasoning
  • 1 cup thawed spinach
  • 1 egg

Instructions

  1. Preheat the oven to 375˚F and grease a deep 9×13 pan with butter or non-stick spray.
  2. Melt butter in a deep skillet over medium-low heat.
  3. Add olive oil and garlic, and cook until softened, about 2-3 minutes.
  4. Sprinkle flour over the mixture and cook for 2-3 minutes, whisking often.
  5. Slowly whisk in chicken stock, then half-and-half, along with salt, pepper, nutmeg, and Italian seasoning. Stir well.
  6. Increase heat to medium-high and bring to a low boil for 1 minute while stirring frequently.
  7. Simmer the sauce on medium-low for 3-4 minutes, stirring constantly, then remove from heat and stir in Parmesan until melted.
  8. In a medium bowl, combine thawed spinach, ricotta, egg, and dried Italian seasoning and mix until well combined.
  9. To assemble the lasagna, spread 1.5 cups of white sauce on the bottom of the casserole dish.
  10. Layer with 4 lasagna noodles, then 1/3 of ricotta mixture, 1/3 of chicken, 1/3 of mozzarella, and 1/3 of Parmesan cheese.
  11. Repeat for a second layer with another 1.5 cups of white sauce, 4 noodles, 1/3 of each of the remaining ingredients.
  12. For the third layer, again add 1.5 cups of white sauce, 4 noodles, and the remaining 1/3 of each ingredient.
  13. Cover tightly with foil (spraying the underside with cooking spray) and bake for 35 minutes.
  14. Remove the foil and bake for an additional 15-25 minutes until cheese is melted and lightly browned.

Notes

Feel free to customize with your favorite vegetables or different cheeses.
Make ahead and refrigerate before baking for a convenient dinner option.
Spray foil to prevent sticking during baking.
