Description

Ingredients

  • 3 tbsp avocado oil
  • 2 cups shredded zucchini – squeezed
  • 1 cup panko bread crumbs
  • 2 eggs
  • 1/3 cup fresh grated parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper

Instructions

  1. Grate the zucchini using a box grater and transfer to a mesh bag or cheese cloth. Squeeze out as much liquid as possible.
  2. Place the squeezed zucchini in a mixing bowl and add the remaining ingredients. Mix thoroughly.
  3. Preheat a large pan over medium heat and add oil. Use an ice cream scoop to place even amounts of the mixture into the pan, shaping them gently.
  4. Cook the fritters for 4-6 minutes on each side. Avoid disturbing them until it's time to flip for best results.
  5. If cooking multiple batches, add more oil to the pan as needed.

Notes

Squeezing excess moisture from the zucchini is crucial to prevent soggy fritters.
Cooking at medium to medium-low temperature will ensure that the fritters cook evenly without burning.
