- 1/4 cup (60 ml) whipping cream or heavy cream
- 4 ounces (112 grams) full-fat cream cheese
- 1/3 cup (56 grams) white chocolate chopped and melted
- 1/2 cup (120 grams) plain greek yogurt
- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- In a small bowl, beat the cream with an electric mixer until stiff peaks form, taking care not to over-mix.
- In a medium bowl, mix the cream cheese and melted white chocolate using the same beaters. Then add the Greek yogurt and mix until well combined before stirring in the mashed raspberries.
- Carefully fold in all but a tablespoon of the whipped cream, keeping the mousse light. Spoon the mixture into two serving glasses and serve immediately, or chill for up to eight hours for a softer mousse texture.
- Top with the reserved tablespoon of whipped cream and garnish with optional fresh raspberries.
Notes
This mousse can be made a day ahead for a quick dessert.
For a lighter texture, ensure you beat the cream until stiff peaks are just formed.
Keep the mousse refrigerated until ready to serve.
