Description

Ingredients

  • ½ tablespoon cornstarch
  • 1 cup chopped strawberries
  • 2 tablespoons cane sugar
  • 1 tablespoon fresh lemon juice
  • ½ cup vegan butter
  • ½ cup + 2 tablespoons cane sugar
  • ¼ cup brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 ½ cups all-purpose flour
  • 6 tablespoons ground graham crackers
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Begin by creating the cornstarch slurry. Mix cold water and cornstarch until a cloudy paste forms, then set aside.
  2. Chop the strawberries into small pieces and place them in a saucepan. Add sugar and lemon juice.
  3. Cook over low heat for 2-3 minutes until the sugar dissolves and the strawberries soften.
  4. Add the cornstarch slurry to the saucepan, stirring continuously and bringing the mixture to a simmer.
  5. Cook until the filling is thick and glossy, about 2-3 minutes.
  6. Remove from heat and transfer the filling to a bowl. Allow it to cool in the fridge while preparing the cookie dough.

Notes

For an extra touch, consider adding a pinch of cinnamon to the dough for flavor.

If the filling is too thick, you can add a little more water while cooking.
