Description

These Valentines Love Letter Pastries are delightful, featuring a buttery texture and sweet strawberry filling. Perfect for a special occasion, these easy-to-make pastries will impress anyone. Make them for loved ones and savor every bite!


Ingredients

Scale
  • 240g of plain flour
  • 2 tablespoons of caster sugar (plus extra for sprinkling)
  • 220g of dairy-free block butter (cold and cut into small cubes)
  • ice-water (see method)
  • 1 jar of vegan friendly strawberry jam
  • dairy-free milk (optional)
  • icing sugar (dusting, optional)

Instructions

  • In a medium bowl, sift flour and sugar. Mix in cold, cubed butter until the mixture resembles sand.
  • Gradually add ice water, 1/2 tablespoon at a time, until the dough forms. It should be smooth and slightly sticky.
  • Wrap the dough in greaseproof paper and refrigerate for 30 minutes until firm.
  • Preheat your oven to 170°C (fan) and line two baking trays with greaseproof paper.
  • Dust your workspace with flour and roll out the dough between two sheets of floured greaseproof paper into a large rectangle. Cut into diamond shapes (about 10cm on each side).
  • Take a teaspoon or two of strawberry jam and place it on the center of each diamond shape. Fold three corners into the center to resemble an open envelope and seal by pressing the corners together.
  • Brush the tops with dairy-free milk and add heart shapes using leftover dough. Sprinkle with sugar for a crispy finish.
  • Bake for 20-25 minutes in the oven until golden brown.
  • Remove from the oven and let cool. The pastries will firm up as they cool. Serve dusted with icing sugar or a simple glaze.

Notes

Ensure that the butter is cold for the best texture.
Adding additional sugar on top helps achieve a crispy, golden finish.
These pastries can be served warm or at room temperature.
