Description

Experience the delightful combination of flavors in this Valentine’s Day Decadent Gingerbread Latte Mousse Domes. Featuring rich espresso and creamy mascarpone, this easy-to-make mousse delivers a beautiful presentation that is perfect for sharing with loved ones.

Ingredients

Scale
  • 1 cup espresso
  • 1/2 cup brown sugar
  • 1 cup white chocolate
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 tablespoon gelatin
  • 1 cup mascarpone
  • 1/2 cup molasses
  • 1 egg
  • 2 teaspoons ginger
  • glazing ingredients

Instructions

  • Bloom the gelatin in a small bowl of cold water. In a saucepan, combine warm espresso with brown sugar until dissolved and stir in white chocolate, cinnamon, cloves, and nutmeg until smooth. Remove from heat and let cool slightly.
  • In another mixing bowl, beat mascarpone and heavy cream until soft peaks form. Fold the cooled mousse base into this whipped cream mixture until well combined and fluffy.
  • In a separate bowl, whisk flour, ground ginger, and a pinch of salt. Stir in molasses and egg yolk until a soft dough forms. Roll out and cut circles for the cookie base.
  • Prepare silicone dome molds by greasing them and fill with the mousse mixture, pressing cookie rounds into mousse until just submerged. Cover and freeze overnight.
  • Gently heat glazing ingredients until warm. Remove mousse domes from molds and place them on a wire rack over a baking sheet. Pour warm glaze over the domes evenly.
  • Present the glazed domes on a serving plate, decorating with cocoa powder or mini gingerbread cookies as desired.

Notes

For a lighter version, you can substitute cream cheese for mascarpone.
Make sure the glazing ingredients are warm enough for even coating on the mousse domes.
