Ingredients

Scale
  • 15.25 ounce strawberry cake mix
  • 8 ounce block cream cheese softened to room temperature
  • ⅓ cup cream cheese chips roughly chopped
  • 2 10 oz bags ghirardelli vanilla melting wafers
  • ½ cup wilton pink candy melts
  • ½ cup wilton bright pink candy melts
  • Sprinkles (optional)

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Spread the cake mix onto the prepared baking sheet and bake for 5 minutes. Cool completely on a wire rack.
  • Beat the softened cream cheese in a mixing bowl until smooth.
  • Fold in the cooled cake mix and mix until a dough consistency forms.
  • Fold in the cream cheese chips until evenly incorporated.
  • Cover the dough with plastic wrap and refrigerate for 2 hours.
  • Scoop the dough using a 1 ½ tablespoon cookie scoop and roll into balls. Set aside for 15 minutes.
  • Melt the vanilla melting wafers using a double boiler or microwave, stirring frequently.
  • Dip each dough ball into the melted vanilla wafers and place on the lined baking sheet.
  • Sprinkle your choice of sprinkles on half of the coated dough balls before the coating dries.
  • Melt the pink candy melts in piping bags and drizzle over the remaining coated cake balls.
  • Allow to set completely before serving.

Notes

Ensure the cake mix is heat-treated to eliminate any bacteria before use.
For best results, allow dough balls to sit for a while before coating to prevent cracking.
Use your preferred color of sprinkles to make them more festive.
