Description

These homemade blueberry bagels bring a delightful taste of fresh blueberries into every bite. Easy to prepare and perfect for breakfast or a snack, they transform a simple bagel into a fruity treat.


Ingredients

  • 1 and 1/2 cups (about 200g) fresh or frozen blueberries
  • 1/4 cup (50g) granulated sugar, divided
  • 1 cup (240g/ml) warm water (between 100–110°f/38–43°c)
  • 1 tablespoon instant or active dry yeast
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (120g) dried blueberries
  • 3 and 3/4 cups (488g) bread flour (spooned & leveled), plus more as needed
  • 2 teaspoons salt
  • for coating the bowl: nonstick spray or 2 teaspoons butter or olive oil
  • 2 quarts (1.9l) water
  • 1/4 cup (85g) honey or barley malt syrup
  • egg wash: 1 egg white beaten with 1 tablespoon water

Instructions

  • Combine the blueberries and half of the sugar in a saucepan over medium-low heat. Cook until a sauce forms, about 10 minutes. Cool slightly.
  • Mix warm water, remaining sugar, and yeast in a stand mixer bowl. Let it sit for 5-10 minutes until foamy.
  • Add half of the cooled blueberry sauce, vanilla extract, dried blueberries, 1 cup of flour, and salt. Mix until incorporated and then add remaining flour gradually until the dough pulls away from the sides.
  • Knead the dough either with a stand mixer for 6-8 minutes or by hand until smooth and elastic. Adjust with flour or water as necessary.
  • Grease a bowl and place the dough inside, turning to coat. Cover and let it rise for 2 hours until doubled in size.
  • Line baking sheets with parchment paper. Divide and shape the dough into 8 bagels, creating holes in the center.
  • Cover the bagels and let them rest for 5-10 minutes as you make the water bath.
  • Preheat the oven to 425°F (218°C).
  • Boil water mixed with honey in a large pot. Boil each bagel for 2 minutes, flipping halfway, then drain and place on baking sheets.
  • Brush the bagels with egg wash before baking.
  • Bake for 26-30 minutes until browned, then cool on racks.

Notes

The blueberry sauce can be made ahead of time and stored in the refrigerator for quicker prep.
Make sure to let the dough rise in a warm place for optimal results.
Use a sharp knife to cut the bagels for easier slicing after baking.
