Ingredients

Scale
  • 8 potatoes
  • 1 cup sour cream
  • 1/2 cup butter
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and bake the potatoes until tender.
  3. Once baked, let potatoes cool slightly and cut them in half.
  4. Scoop out the insides into a bowl and mix with sour cream, butter, cheese, bacon, salt, and pepper until smooth.
  5. Fill the potato skins with the mixture and sprinkle additional cheese on top.
  6. Bake the filled potatoes for about 20 minutes until heated through and cheese is bubbly.

Notes

You can substitute plain yogurt for sour cream for a lighter option.
