This Tortellini Pasta Salad is packed with irresistible flavors and simple to prepare. Featuring cheese tortellini, salami, mozzarella, and fresh veggies, it’s perfect for a quick dinner or a delightful side for gatherings.

- 1 (20-oz) bag refrigerated cheese tortellini
- 1 cup italian dressing
- 1 (8-oz) package sliced hard salami (chopped)
- 1 (8-oz) container mozzarella pearls (drained)
- 1 (6-oz) can sliced black olives (drained)
- 1 red bell pepper (cleaned and chopped)
- 1 (10-oz) container cherry tomatoes (halved)
- ¼ small red onion (thinly sliced)
- ½ cup shredded parmesan cheese
- ½ cup fresh basil leaves (thinly sliced)
Instructions
- Prepare a large salad bowl to toss the salad without spilling.
- Cook the tortellini as directed on the package. Drain well, rinse under cold water, and drain again.
- Place the drained tortellini in the salad bowl and mix with ½ cup of the dressing. Set this aside.
- While the tortellini sit, prepare the remaining ingredients and add them to the bowl. Do not mix yet.
- Add the remaining ½ cup of dressing and toss the salad well.
- Cover and refrigerate the salad for 30-60 minutes before serving. Toss again before serving, adding more dressing or olive oil if needed. Garnish with extra basil and parmesan if desired.
Notes
For a lighter version, consider using a vinaigrette dressing instead of creamy dressing.
Feel free to add other vegetables like cucumbers or bell peppers to enhance freshness.
This salad can be made a day in advance—just keep the dressing separate until serving.
