Description

This Tomato Miso Soup with Garlic Sesame Mushrooms offers an irresistible flavor with simple prep. Packed with fresh ingredients like tomatoes, shiitake mushrooms, and tofu, it’s a comforting dish perfect for a quick dinner or a healthy meal.


Ingredients

  • 8 oz shiitake mushrooms, stems removed and thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Juice of half a lemon
  • 1 cup cherry tomatoes, halved
  • 3 scallions, thinly sliced, whites and green portions separated
  • 1 ear of corn, kernels cut away from the cob
  • 4 cups hot water
  • 2 dry shiitake mushrooms
  • 2–3 tbsp yellow miso paste
  • 11 oz soft tofu, sliced into rounds or cubed
  • Sesame oil, for serving (optional)
  • Cooked rice, for serving (optional)

Instructions

  1. Preheat the oven to 425F and mix shiitake mushrooms with sesame seeds, garlic powder, onion powder, 1 tablespoon of oil, and salt in a bowl. Spread on a baking sheet and bake for 15 minutes, then toss and bake for another 5-10 minutes until browned. Squeeze lemon juice over and toss again.
  2. While the mushrooms bake, heat the remaining tablespoon of oil in a large saucepan over medium-low heat. Add the cherry tomatoes and a pinch of salt, sautéing for about 5 minutes until they release their juices.
  3. Stir in the scallions and corn, cooking for an additional 2-3 minutes with the tomatoes.
  4. Pour in 3 1/2 cups of water, add the dried mushrooms and stir. Bring to a boil, then lower the heat to simmer for 10 minutes. Gently add tofu and warm for 3-5 minutes.
  5. In a small bowl, mix the remaining 1/2 cup of water with miso paste until smooth. Remove the dried mushrooms from the soup and stir in the miso mixture once the heat is off.
  6. Optionally drizzle sesame oil on top, adjusting seasoning with salt or miso. Serve soup in bowls topped with roasted mushrooms and a squeeze of lemon, alongside rice.

Notes

Feel free to substitute any other vegetables or protein you prefer.
Leftover soup can be stored in the refrigerator for up to 3 days. Reheat gently over low heat.
For extra flavor, consider adding a splash of soy sauce.
