Description

  • 4 boneless skinless chicken breasts, about 1 ½ to 2 pounds total
  • 1 teaspoon italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper optional, for a little heat
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, cubed
  • freshly chopped parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F and line a 9×13-inch baking dish or rimmed baking sheet with parchment paper or foil.
  2. Pound the chicken breasts between two pieces of plastic wrap to an even thickness of about ¾ to 1 inch.
  3. In a small bowl, combine the italian seasoning, kosher salt, garlic powder, onion powder, paprika, black pepper, and optional cayenne.
  4. Pat the chicken breasts dry and place them in the baking dish in a single layer.
  5. Drizzle olive oil on both sides of the chicken and rub it in. Evenly sprinkle the seasoning mixture over the chicken.
  6. Top each breast with small cubes of butter for extra flavor and moisture while baking.
  7. Bake for 18 to 25 minutes, until the internal temperature reaches 165°F.
  8. Let the chicken rest for 5 minutes before slicing or serving whole, garnished with fresh parsley.
