Ingredients

  • 15 ounces black beans, drained and rinsed
  • 15 ounces corn, drained
  • 1 medium tomato, diced
  • 1 jalapeño, seeds and ribs removed and diced
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons minced fresh cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt or 1/4 teaspoon table salt
  • dash freshly ground black pepper

Instructions

  1. In a large bowl, combine black beans, corn, diced tomato, diced jalapeño, diced red onion, minced garlic, lime juice, olive oil, minced cilantro, cumin, kosher salt, and black pepper.
  2. Stir the ingredients until well mixed. Adjust salt and pepper to taste.

Notes
