Instructions

  1. Preheat your oven to 350°F. Grease a 8.5-4.5-inch loaf pan and line it with parchment paper, ensuring an overhang on the sides for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder. Set aside.
  3. In a large bowl, whisk the eggs, vegetable oil, Greek yogurt, granulated sugar, and vanilla extract until smooth and well combined.
  4. Stir the shredded zucchini into the mixture until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined, being careful not to overmix.
  6. Fold in the semisweet chocolate chips evenly into the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula, and add the dark chocolate chunks on top.
