- 1 pound ground beef
- 1 ounce packet taco seasoning
- 2/3 cup water
- 1/2 cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons fresh cilantro finely chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 cups cooked white rice or brown rice
- 1/2 red onion diced
- 1 avocado diced
- 1/2 cup corn canned, fresh, or frozen
- 2 cups romaine lettuce chopped
- 2 roma tomatoes chopped
- 1/4 cup fresh cilantro chopped
- 1/2 cup black beans rinsed and drained
- 1/2 cup shredded cheddar cheese
Instructions
- Heat a large skillet over medium heat.
- Add ground beef and cook until browned and fully cooked, about 6-8 minutes, breaking it up as it cooks.
- Drain excess grease from the skillet.
- Stir in taco seasoning and 2/3 cup water; simmer for 2-3 minutes until sauce thickens and coats the beef.
- Remove from heat.

Can substitute ground turkey for ground beef for a lighter option.
