Description

Sugar Cookie Fruit Pizzas are a delightful treat with soft, buttery cookies topped with creamy frosting and fresh fruit. Perfect for parties or a fun family dessert!


Ingredients

  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a stand mixer, combine the butter and granulated sugar, beating on medium-high speed until light and fluffy for about 3 minutes. Then, add the egg, egg yolk, vanilla, and almond extract, mixing on low until smooth for 30 seconds.
  3. Gradually mix in baking soda, salt, and flour until well combined.
  4. Scoop the dough into large balls, using a ¼ cup cookie scoop.
  5. Place 6-7 dough balls on each baking sheet and bake for 11-14 minutes, until the edges are light golden brown and the tops show some crackling but are not over baked.
  6. While the cookies bake, cream the cream cheese and additional butter together until smooth. Mix in vanilla, a pinch of salt, and powdered sugar until you achieve a smooth frosting.
  7. Once cookies are cooled, frost each one with the cream cheese mixture, then add diced fresh fruit on top.

Notes

Make sure the butter is at room temperature for easier mixing.
Try using a variety of fruits for different flavors and colors on the pizzas.
Cookies can be baked ahead of time and frosted later to save preparation time.
