Description

These Strawberries and Cream Cookies are a delightful treat, bursting with flavor from freeze-dried strawberries and white chocolate. With a straightforward preparation process, these cookies are perfect for satisfying your sweet tooth or sharing with friends at any gathering.


Ingredients

  • 3 cups (360 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 and 1/4 cups (248 g) granulated sugar
  • 1/4 cup (53 g) light brown sugar, packed
  • 1 tablespoon (14 ml) vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1.2 ounce bags (68 g) freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F and line two large baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a stand mixer or a large bowl with a handheld mixer, cream the butter and both sugars on medium speed for about 3 minutes, until light and fluffy. Add the vanilla extract and mix well.
  4. Lower the speed to medium-low and add the eggs one by one, mixing well and scraping down the bowl after each addition.
  5. Reduce the speed to low and gradually add the flour mixture, mixing just until combined. Gently mix in the white chocolate chips and dried strawberries until evenly distributed.
  6. Using a large cookie scoop, place 3 tablespoons of dough on the prepared sheet, ensuring the side with the most chocolate chips and strawberries is facing up. Leave 2 inches between each cookie.
  7. Bake one sheet at a time for 12 to 13 minutes, until the edges are golden but the center remains soft.
  8. Remove from the oven and carefully reshape any spread cookies for a neat appearance. Optionally, press extra white chocolate chips on top.
  9. Allow the cookies to cool on the baking sheet for 20 minutes before serving.

Notes

Ensure butter is at room temperature for better mixing.
Using freeze-dried strawberries intensifies the flavor without adding moisture.
Store cookies in an airtight container for up to a week.
