These Strawberries and Cream Cookies are a delightful treat, bursting with flavor from freeze-dried strawberries and white chocolate. With a straightforward preparation process, these cookies are perfect for satisfying your sweet tooth or sharing with friends at any gathering.

- 3 cups (360 g) all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (227 g) unsalted butter, room temperature
- 1 and 1/4 cups (248 g) granulated sugar
- 1/4 cup (53 g) light brown sugar, packed
- 1 tablespoon (14 ml) vanilla extract
- 2 large eggs, room temperature
- 11 ounces white chocolate chips
- 2 1.2 ounce bags (68 g) freeze-dried strawberries
Instructions
- Preheat the oven to 325°F and line two large baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a stand mixer or a large bowl with a handheld mixer, cream the butter and both sugars on medium speed for about 3 minutes, until light and fluffy. Add the vanilla extract and mix well.
- Lower the speed to medium-low and add the eggs one by one, mixing well and scraping down the bowl after each addition.
- Reduce the speed to low and gradually add the flour mixture, mixing just until combined. Gently mix in the white chocolate chips and dried strawberries until evenly distributed.
- Using a large cookie scoop, place 3 tablespoons of dough on the prepared sheet, ensuring the side with the most chocolate chips and strawberries is facing up. Leave 2 inches between each cookie.
- Bake one sheet at a time for 12 to 13 minutes, until the edges are golden but the center remains soft.
- Remove from the oven and carefully reshape any spread cookies for a neat appearance. Optionally, press extra white chocolate chips on top.
- Allow the cookies to cool on the baking sheet for 20 minutes before serving.
Notes
Ensure butter is at room temperature for better mixing.
Using freeze-dried strawberries intensifies the flavor without adding moisture.
Store cookies in an airtight container for up to a week.
