Description

These Sticky Orange Salmon Bowls feature succulent salmon chunks coated in a sweet and zesty orange glaze. Quick to prepare and loaded with fresh flavors, they make for an ideal healthy dinner. With ingredients like baby cucumbers, quick pickled onions, and creamy avocado, each bowl is a delightful balance of taste and texture, perfect for homemade meals.

  • 2 baby cucumbers, thinly sliced
  • jasmine or basmati rice, cooked for serving
  • 2 pounds salmon, cut into chunks
  • 1 teaspoon garlic powder
  • kosher salt and pepper
  • 1 tablespoon olive oil
  • ⅓ cup orange juice
  • ¼ cup water
  • 3 tablespoons honey
  • 1 avocado, thinly sliced
  • 1 ripe orange, segmented

Instructions

  1. Prepare the quick pickled onions, adding thinly sliced cucumbers to the mixture. This can be done ahead of time and stored in the fridge.
  2. Cook the jasmine or basmati rice according to package instructions so it's ready to serve.
  3. Cut the salmon into 1-inch chunks. Season with salt, pepper, and garlic powder on all sides.
  4. Heat olive oil in a large cast iron skillet over medium heat. Add the salmon pieces in a single layer (cooking in batches, if needed). Cook for 1 to 2 minutes until golden brown, then flip to cook the other side.
  5. Whisk together orange juice, water, and honey until well combined. Pour this mixture into the skillet and allow it to bubble around the salmon. Toss the salmon to ensure all pieces are coated and let the sauce bubble for an additional 1 to 2 minutes so it thickens.
  6. Assemble the bowls with cooked rice as the base, topped with salmon, orange segments, avocado slices, and pickled onions and cucumbers. Drizzle any extra sauce from the pan on top.

Notes

Feel free to adjust the seasoning on the salmon to your preference.
The pickled onions can be made a day in advance for added convenience.
For extra flavor, try adding sesame seeds or fresh herbs on top before serving.
