Description

These Soft and Bright Lemon Brownies with White Chocolate Glaze combine zesty lemon flavors with a rich white chocolate topping. Perfect for an easy dessert or a special treat!


Ingredients

  • 1 cup sugar
  • 1 tablespoon lemon zest
  • 1/2 cup butter
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 2 large eggs
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • lemon zest for topping

Instructions

  1. Preheat the oven to 350℉ and prepare an 8×8 inch pan with greased parchment paper.
  2. In a large bowl, mix sugar and lemon zest, rubbing the zest into the sugar to enhance flavor.
  3. Add butter, lemon extract, and vanilla extract into the bowl. Beat on medium speed until fluffy, about 1 minute.
  4. Incorporate lemon juice and eggs, beating quickly until smooth and combined.
  5. Add dry ingredients: flour, baking powder, and salt. Mix on low speed until just combined. Pour batter into the prepared pan and bake for 25 minutes. Check for doneness with a toothpick, letting it cool for 15 minutes afterwards.
  6. For the white chocolate lemon glaze: In a small bowl, combine white chocolate and lemon juice. Microwave in intervals of 20 seconds, stirring until completely melted and glossy. Mix in lemon extract and salt.
  7. Pour the glaze over the brownies, spreading it out. Sprinkle with lemon zest and let set for at least 20 minutes before slicing.

Notes

Feel free to use a double boiler instead of a microwave for melting the chocolate.
Make sure the brownies are completely cool before pouring the glaze to achieve a perfect finish.
