- 1 tablespoon lemon zest
- 1/2 cup butter
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 2 large eggs
- 1 cup flour

- 1/4 teaspoon salt
- 1 cup white chocolate
- 1 tablespoon lemon juice
- 1/4 teaspoon salt

Instructions
- Preheat the oven to 350℉ and prepare an 8×8 inch pan with greased parchment paper.
- In a large bowl, mix sugar and lemon zest, rubbing the zest into the sugar to enhance flavor.
- Add butter, lemon extract, and vanilla extract into the bowl. Beat on medium speed until fluffy, about 1 minute.
- Incorporate lemon juice and eggs, beating quickly until smooth and combined.
- Add dry ingredients: flour, baking powder, and salt. Mix on low speed until just combined. Pour batter into the prepared pan and bake for 25 minutes. Check for doneness with a toothpick, letting it cool for 15 minutes afterwards.
- For the white chocolate lemon glaze: In a small bowl, combine white chocolate and lemon juice. Microwave in intervals of 20 seconds, stirring until completely melted and glossy. Mix in lemon extract and salt.
- Pour the glaze over the brownies, spreading it out. Sprinkle with lemon zest and let set for at least 20 minutes before slicing.
Notes
Feel free to use a double boiler instead of a microwave for melting the chocolate.
Make sure the brownies are completely cool before pouring the glaze to achieve a perfect finish.
