Description

This Simple Tomato Salad combines ripe seasonal tomatoes with fresh basil and a zesty dressing. It’s perfect for a light meal or a side dish at gatherings, offering vibrant flavors and simple prep.


Ingredients

  • 3 pounds mixed tomatoes, beefsteak, heirloom, cherry, grape
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup shallot, thinly sliced
  • ½ teaspoon garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dijon mustard
  • ¼ cup extra-virgin olive oil
  • ⅓ cup fresh basil leaves, loosely packed, torn

Instructions

  1. Slice large tomatoes into wedges and halve smaller ones. Place them in a large bowl.
  2. Sprinkle with ½ teaspoon kosher salt and gently toss. Let rest for 10-15 minutes to release juices.
  3. Add black pepper, shallot, garlic, red wine vinegar, lemon juice, and Dijon mustard to the bowl. Stir gently to combine.
  4. Slowly drizzle in olive oil while tossing to coat everything evenly.
  5. Add torn basil and mix gently. Adjust salt or pepper to taste.
  6. Let the salad sit for another 10-15 minutes at room temperature to develop flavors.
  7. Finish with a pinch of kosher salt and extra black pepper before serving.

Notes

Use tomatoes that are ripe and in season for the best flavor.
Adjust the seasoning to personal preference, adding more salt or pepper as needed.
For an extra kick, add a pinch of red pepper flakes.
