- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp vanilla
- 1 tbsp lemon juice
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup butter, cold & cubed
- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat your oven to 350 degrees F and prepare a pie pan with non-stick spray.
- Pit, peel, and slice enough peaches to fill 5 cups, then place them in a medium bowl.
- Mix in sugar, cornstarch, vanilla, and lemon juice until well combined.
- Pour the peach mixture into the prepared pie pan.
- In a food processor, pulse together flour, brown sugar, and cinnamon until combined. Then add in cubed butter and pulse until crumbly. Gently stir in old-fashioned rolled oats.
- Spread the oat topping evenly over the peaches in the pan.
- Bake in the oven for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
Notes
For a little extra flavor, consider adding a pinch of nutmeg to the peach filling.
