Description

Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350 degrees F and prepare a pie pan with non-stick spray.
  2. Pit, peel, and slice enough peaches to fill 5 cups, then place them in a medium bowl.
  3. Mix in sugar, cornstarch, vanilla, and lemon juice until well combined.
  4. Pour the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together flour, brown sugar, and cinnamon until combined. Then add in cubed butter and pulse until crumbly. Gently stir in old-fashioned rolled oats.
  6. Spread the oat topping evenly over the peaches in the pan.
  7. Bake in the oven for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.

Notes

For a little extra flavor, consider adding a pinch of nutmeg to the peach filling.
