- 1 pound kielbasa or smoked sausage, sliced into 1-inch coins
- 1 pound red potatoes, cut into 1-inch chunks
- 1 red bell pepper, sliced into strips
- 1/2 head small green cabbage, sliced and chopped
- 2–3 tablespoons olive oil
- salt and pepper to taste
- 1/2 teaspoon garlic powder or granulated garlic
- 1/2 teaspoon Italian seasonings
Instructions
- Preheat the oven to 425°F.
- Line a large rimmed baking sheet with heavy-duty foil; evenly spread the sausage coins, potatoes, bell peppers, and cabbage over the foil.
- Drizzle olive oil over the sausage and vegetables; season with salt, pepper, garlic powder, and Italian seasonings. Toss gently to combine.
- Bake in the preheated oven for 25-30 minutes or until the potatoes are fork-tender and all ingredients are golden brown. Serve immediately.
