This Sheet Pan Salmon is full of irresistible flavor and easy to prepare. With garlic, fresh veggies, and a zesty marinade, it’s perfect for a quick dinner or healthy meal.

- 4 salmon fillets
- Salt and pepper
- 3 tbsp olive oil
- 2 garlic cloves, minced
- Zest ½ lemon
- Juice 1 lemon, approx. 2 tbsp
- 1 ½ tsp oregano
- 1 tsp paprika
- 12 oz green beans, larger ones cut in half
- 1 pint grape tomatoes, halved
Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, and paprika.
- Place green beans in a bowl, drizzle with 1 tablespoon of marinade, and toss to coat. Spread the beans on the baking sheet and roast for 5 minutes.
- Take the baking sheet out of the oven and add the halved tomatoes with 1 tablespoon of the marinade. Toss to mix.
- Push the vegetables to the sides and place the salmon fillets in the center. Season with salt and pepper, then brush the remaining marinade over the fillets.
- Return the baking sheet to the oven and cook for 10-12 minutes. Switch to broil for an extra 2-3 minutes until cooked through. Enjoy!
- Optionally, sprinkle feta cheese and fresh herbs over the salmon before serving.
Notes
If you prefer more spice, add cayenne pepper to the marinade.
Serve with your favorite side salad for a complete meal.
Use fresh herbs for garnishing for added flavor.
