Description

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion chopped
  • 2 garlic cloves minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F and prepare a baking pan with foil or parchment paper.
  2. Slice the zucchini in half lengthwise and scoop out the insides. Chop the flesh roughly and set aside.
  3. In a large skillet over medium-high heat, cook the sausage until browned, about 3-4 minutes.
  4. Add the chopped onion, minced garlic, and reserved zucchini flesh to the skillet. Cook until the veggies soften and the sausage is fully cooked, around another 3-4 minutes.
  5. Mix in the marinara sauce thoroughly.
  6. Place the zucchini halves on the prepared baking pan and season with salt and pepper. Fill each zucchini boat with the sausage mixture and top with mozzarella cheese.
  7. Bake for 15-20 minutes, until the cheese is melted and bubbly. Test for tenderness with a fork; if necessary, extend the cooking time for thicker boats.
  8. Serve warm and enjoy, refrigerating any leftovers.

Feel free to use a mix of different sausages for varied flavor.
Adjust the cooking time based on the thickness of the zucchini to ensure they are fully tender.
