Description

Rainbow Grilled Gnocchi Skewers are packed with vibrant colors and flavors, featuring tender gnocchi, fresh veggies, and a zesty dressing. This dish is perfect for a quick dinner or a healthy meal option you can easily prepare at home.


Ingredients

  • 12 oz. potato gnocchi
  • 1 large bell pepper, chopped into chunks
  • 1 pint cherry tomatoes
  • ½ red onion, chopped into chunks
  • ½ cup olive oil, separated
  • ¼ cup fresh lemon juice, separated
  • 1 teaspoon sea salt, divided
  • ½ teaspoon ground black pepper, divided
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fresh mint
  • ¼ cup fresh chopped cilantro
  • 4 oz. goat cheese crumbles

Instructions

  1. Preheat the grill to 400℉ and spray grates with cooking spray.
  2. Boil a large pot of salted water and cook the gnocchi for 1 minute. Drain and rinse with cold water. Set aside.
  3. In a 9×13 baking dish, combine ¼ cup of olive oil, 2 tablespoons of lemon juice, ½ teaspoon of sea salt, and ⅛ teaspoon of black pepper. Whisk to blend.
  4. Build the skewers by alternating gnocchi, peppers, onions, and cherry tomatoes until all ingredients are used.
  5. Roll the skewers in the olive oil and lemon juice mixture, reserving some for dressing later.
  6. Grill the skewers for 20 minutes, rotating every 5 minutes. Once done, set aside on a serving plate.
  7. For the dressing, combine the remaining olive oil, lemon juice, salt, pepper, and herbs in the baking dish. Whisk to blend.
  8. Pour the dressing over the grilled skewers and top with goat cheese crumbles.

Notes

You can substitute any vegetables you prefer on the skewers.
Soaking wooden skewers in water before grilling can prevent them from burning.
Leftover skewers can be refrigerated for up to 2 days.
