Description

  • 2 large red onions, very thinly sliced (about 4 to 5 cups sliced)
  • 2 cups (480 ml) apple cider vinegar
  • 1 cup (240 ml) water
  • 2 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon black peppercorns
  • 4 cloves garlic, smashed
  • ½ teaspoon red pepper flakes

Instructions

  1. Thinly slice the red onions with a mandoline if available, then pack them tightly into a clean 2-quart glass jar.
  2. Combine the apple cider vinegar, water, granulated sugar, kosher salt, black peppercorns, smashed garlic cloves, and red pepper flakes in a small saucepan or microwave-safe bowl. Heat until the sugar and salt dissolve, without boiling, for about 1 to 2 minutes on the stove or 30 to 45 seconds in the microwave.
  3. Pour the warm brine over the onions to ensure they are fully submerged, using a spoon or chopstick to press them down if necessary.
  4. Allow the jar to cool at room temperature for about 20 to 30 minutes before sealing and placing it in the refrigerator.
  5. The pickled onions can be enjoyed after chilling for at least 15 to 30 minutes, though they taste best when left to marinate for a few hours or overnight.

Notes

These pickled onions will last for several weeks in the refrigerator.
Feel free to adjust the level of sugar or add more spices for a different flavor profile.
