- 3/4 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 1/4 cups powdered sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon heavy cream, or whole milk
- 3 cups puppy chow
Instructions
- Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract, whisking until well combined. Stir in flour, cocoa powder, espresso powder (if using), and salt until just mixed. Fold in 1 cup of chopped chocolate.
- Spread the batter evenly into the prepared pan. Sprinkle the remaining ¼ cup of chopped chocolate on top. Bake for 25 to 35 minutes, checking with a toothpick for moist crumbs. Allow the brownies to cool completely in the pan.
- In a stand mixer, beat peanut butter and softened butter until creamy. Mix in powdered sugar, salt, vanilla, and heavy cream until light and fluffy.
- Spread the peanut butter frosting over the cooled brownies evenly.
- Sprinkle the puppy chow over the frosting, gently pressing it in to adhere.
- Cut into squares and serve.
