Instructions

- Separate the eggs, placing the whites in a large mixing bowl and setting the yolks aside. Beat the egg whites until stiff peaks form, then set aside.
- In another bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Create a well in the center, add egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil, then whisk until nearly smooth with some lumps.
- Gently fold the beaten egg whites into the batter until no streaks remain, being careful not to overmix.
- Pour batter into the preheated waffle iron as per the manufacturer's instructions, cooking until both sides are golden brown.
