- optional: extra graham cracker crumbs or english toffee bits for dusting
Instructions
- In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until creamy and smooth.
- Add pumpkin puree and cinnamon, and mix at medium speed until fully combined and smooth.
- Incorporate graham cracker crumbs, pumpkin pie spice, and cinnamon, mixing on medium until dough is thick and smooth, about 1-2 minutes.
- Transfer dough to a bowl, cover, and refrigerate for about 2 hours or longer if necessary.
- Prepare a baking sheet by lining it with parchment paper.
- Scoop a tablespoon of dough and roll into a ball about 1 inch in diameter. Place on baking sheet, spaced 2 inches apart. You should get around 20 truffles.
- Chill for 20-25 minutes before dipping in chocolate.
- In a microwave-safe bowl, add white chocolate chips and microwave at 100% power in 10-15 second intervals, stirring until melted and smooth.
- Take truffles from the refrigerator and dip each one in the melted chocolate using a fork to ensure full coverage.
- Remove truffle from chocolate and scrape excess chocolate with the fork against the bowl.
- Place the truffle back on the lined baking sheet, using a second fork if necessary to maintain shape.
- Repeat with remaining truffles; re-dip any areas if needed after they harden slightly.
- Sprinkle toffee bits or graham crumbs on top before they set completely.
- Refrigerate until fully set before serving. Truffles can sit at room temperature for a few hours before serving.
