  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract

  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 2 cups (248g) all-purpose flour
  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ teaspoon salt
  • 2 cups (226g) powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • 3 tablespoons (45ml) heavy whipping cream

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with silpat liners or parchment paper.
  2. In a stand mixer, cream together the softened butter and sugar. Incorporate the egg and vanilla extract.
  3. Stir in the pumpkin pie spice, baking soda, cream of tartar, and salt. Gradually add in the flour until well combined.
  4. Scoop balls of dough, about 2 tablespoons each, and place them on the prepared cookie sheets.
  5. Bake for 9-10 minutes, removing them from the oven just as the bottoms begin to turn golden. Allow them to finish cooking as they cool.
  6. Let the cookies cool for 5 minutes before transferring them to a wire rack to cool completely before frosting.
  7. For the frosting, beat together the butter and salt until creamy. Gradually add the powdered sugar until crumbly.
  8. Add the vanilla, pumpkin pie spice, and 2 tablespoons of heavy whipping cream. Mix until smooth, adjusting with more cream if necessary. Frost the cookies.
  9. Store the cookies at room temperature, loosely covered, allowing the frosting to semi-dry to prevent sticking.

Notes

Ensure to bake just until golden at the bottom for soft cookies.
Frosting can be adjusted for consistency with extra cream if needed.
