Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, oats, baking soda, cinnamon, pumpkin pie spice, and salt.
- In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the pumpkin puree and egg yolk, mixing until well combined.
- Gradually add the flour mixture and mix until thoroughly incorporated, then stir in the white chocolate chips.
- Using a 2-tablespoon scoop, drop cookie dough onto the prepared baking sheets.
