Description

These Pumpkin Delight Cookies are a delightful treat with their pumpkin filling, warm spices, and simple preparation. Perfect for gatherings or a cozy afternoon snack!

  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together pumpkin purée, 1½ cups sugar, pumpkin pie spice, and cinnamon in a medium saucepan.
  2. In a small bowl, mix cornstarch and apple juice until dissolved. Pour this mixture into the saucepan and cook over medium heat, stirring until it reaches a gentle boil and simmers for about 10 minutes. Remove from heat and cool completely.
  3. For the cookie dough, beat melted butter and 1 cup sugar in a large mixing bowl until thickened, about 2–3 minutes. Add molasses and egg, mixing until smooth.
  4. Incorporate baking soda, cinnamon, pumpkin pie spice, salt, and flour. Mix until a soft dough forms. If sticky, add more flour a tablespoon at a time.
  5. Cover the dough and chill in the fridge for 30 minutes. Preheat the oven to 350°F, then roll out the dough to ¼ inch thick and cut desired shapes.
  6. Cut out pumpkin faces from half of the cookies with a small knife, leaving the other half intact.
  7. Assemble the cookies by adding about 1 tablespoon of cooled filling onto each bottom cookie and place a face cookie on top, gently sealing the edges.
  8. Bake on a parchment-lined sheet for 10–13 minutes, ensuring the centers are cooked through. Cool on a rack before serving.

Notes

For a fun variation, try adding chocolate chips to the cookie dough.
Ensure that the pumpkin filling cools completely to enhance the flavor and texture.
