Instructions

  1. Combine pumpkin puree, vegetable oil, granulated sugar, egg, and vanilla extract in a large mixing bowl until smooth.
  2. In the same bowl, add baking soda, pumpkin pie spice, baking powder, kosher salt, and all-purpose flour. Mix until just combined.
  3. Cover the bowl and chill the dough for a minimum of one hour, or up to eight hours for better flavor.
  4. Preheat your oven to 350°F (175°C) and prepare your baking sheet with parchment paper or a non-stick mat.
  5. Scoop 2 tablespoons of batter per cookie onto the baking sheet, leaving 2 inches of space between each cookie.
