Description

This Puff Pastry Chicken Pot Pie is a comfort-food classic, packed with tender chicken and veggies in a creamy sauce, all wrapped in buttery puff pastry—perfect for cozy dinners!


Ingredients

  • 1 sheet puff pastry
  • 1/3 cup butter
  • 1/2 cup diced onion
  • 1/2 cup flour
  • 1 1/2 cups chicken broth
  • 1/4 cup dry white wine or additional chicken broth
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups frozen peas and carrots or mixed vegetables
  • 2 cups diced or shredded chicken
  • 1 egg yolk
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 400℉.
  2. Remove the puff pastry from the freezer and let it thaw while preparing the filling.
  3. Melt the butter in a skillet over medium heat.
  4. Sauté the diced onion for 2-3 minutes.
  5. Sprinkle the flour over the onions and stir, cooking for 30-60 seconds.
  6. Slowly pour in chicken broth while stirring constantly, allowing the mixture to thicken.
  7. Add white wine (or extra broth) and milk, then bring to a boil.
  8. Remove from heat, stir in garlic powder, black pepper, salt, mixed vegetables, and chicken.
  9. Pour the filling into a pie plate.
  10. Mix the egg yolk and water in a small bowl to create an egg wash; set aside.
  11. Unroll the puff pastry and lay it over the filling, trimming and crimping the edges if desired.
  12. Cut vent holes in the puff pastry with a sharp knife.
  13. Brush the egg wash over the pastry.
  14. Place the pie in the oven on a rimmed sheet pan to catch any spills.
  15. Bake for 25-30 minutes until the puff pastry is golden brown and the filling bubbles.
  16. Let the pie sit for 5 minutes before serving.

Notes

For a richer flavor, use homemade chicken broth.
Feel free to substitute frozen corn or other vegetables based on preference.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
