- 2 large portobello mushroom caps
- Olive oil

- 1 red bell pepper
- 1 red onion
- Spinach
- 1 avocado
- 2 cloves garlic
- Parsley
- Cilantro
- Lemon juice
- Red wine vinegar
- Chili flakes
- Buns or flatbread
Instructions
- Prepare the grill by applying cooking spray or olive oil, then heat to medium-high.
- Stem and clean the portobello caps, drizzling both sides with olive oil, seasoning with salt, pepper, and oregano. Grill for about 10 minutes on each side until tender with grill marks. If desired, add cheese until melted.
- In a skillet, drizzle olive oil over the chopped red bell pepper and onion, seasoning with salt and pepper. Cook over medium heat for 10-15 minutes until softened. Set aside and wilt spinach in the same skillet for 1-2 minutes, then turn off the heat.
- In a blender or food processor, combine avocado, garlic, olive oil, parsley, cilantro, lemon juice, red wine vinegar, and chili flakes. Blend until smooth, season with salt and pepper.
- Warm the buns on the grill. Assemble the burgers by spreading the avocado mixture on the bun, adding the mushroom cap, spinach, and sautéed vegetables.
