These Plum Bars are a delightful blend of sweet, juicy plums and a buttery crust, making for a quick and easy dessert that everyone will love.

- 1 ¾ cup all purpose flour
- ⅔ cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup butter, cold
- 1 egg, whisked
- 2 tbsp milk
- 4 plums, diced small
- ¼ cup sugar
- 2 tbsp all purpose flour
- ½ tsp vanilla extract
Instructions
- Preheat oven to 400° F and line an 8×8 baking dish with parchment paper.
- In a large bowl, stir the flour, sugar, baking powder, and salt together. Grate the cold butter into the bowl using a cheese grater.
- Combine the mixture until the butter resembles small pebbles, then add the egg and milk, stirring until combined.
- In a separate bowl, mix the diced plums, sugar, flour, and vanilla extract until well combined.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan evenly.
- Spread the plum mixture over the crust in an even layer, then sprinkle the remaining crust mixture on top.
- Bake for 30-32 minutes until the edges are golden brown. Allow to cool at room temperature before slicing.
Notes
Feel free to substitute with other fruits like peaches or cherries if plums are not available.
These bars can be stored in an airtight container for up to 3 days.
For an extra touch, serve with a scoop of vanilla ice cream.
