- 2 tablespoons cornstarch

- ¾ cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large bowl, combine the melted butter, sugar, and vanilla extract until well mixed.
- Add in the flour and salt, mixing until a soft dough is formed.
- Press the dough evenly into the bottom of the prepared pan.
- Bake for 15 minutes, or until the edges start to turn lightly golden.
Notes
Feel free to leave the peach skins on if you prefer a more rustic texture.
These bars can be served warm or chilled for a refreshing treat.
You can add nuts to the crumb topping for extra crunch.
