- 3 pounds ripe peaches peeled, pitted and cut into 8 pieces
- 2/3 cup white granulated sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup dark brown sugar packed
- ¾ cup white all-purpose flour
- 2/3 cup old fashioned rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ stick salted butter cut into very small pieces
Instructions
- Preheat the oven to 350 degrees.
- Grease a 9-inch baking dish with non-stick spray and set aside.
- In a large bowl, combine sliced peaches with sugar, toss to coat and set aside.
- In a medium bowl, combine brown sugar, flour, rolled oats, cinnamon, and nutmeg.
- Add butter to the dry mixture and mix until coarse crumbs form.
- In the bowl of peaches, mix in vanilla, cornstarch, cinnamon, and salt until all slices are coated.
- Transfer the peaches to the prepared baking dish.
- Spread the crumb topping evenly over the peaches.
- Bake for 45-50 minutes until the topping is golden brown and juices are bubbling around the edges.
- Let it cool for 15 minutes before serving.
- Optional: Serve with vanilla ice cream and mint.
