- 1.5 kg yellow peaches, peeled and cut into eight wedges
- 1/4 cup caster sugar
- 1 tsp cornflour
- 1 tbsp lemon juice
- 1/8 tsp salt
- 1 1/4 cups plain flour
- 1/3 cup caster sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 85 g unsalted butter
- 1/2 cup plain yoghurt
- 1 tsp demerara sugar
- 1/2 tsp cinnamon powder
- Ice cream or whipped cream
Instructions
- Combine the peaches with sugar in a large bowl and let them macerate for 40 minutes to enhance their flavor.
- Preheat the oven to 210°C (410°F) during the maceration process.
- After maceration, drain the peaches, reserving the juices.
- In a bowl, mix 1/4 cup of the reserved peach juice with cornflour, salt, and lemon juice until well combined.
- Add the peaches to the syrup mixture, ensuring they are well coated, and adjust sweetness as necessary.
- Transfer the peach mixture into a medium baking dish and parbake for 12 minutes.
Notes
For a richer flavor, allow the peaches to macerate longer than 40 minutes.
Feel free to mix in other fruits for a fruit medley cobbler.
Serve with your choice of ice cream or whipped cream for added indulgence.
