Description

This peach cobbler is a delightful summer treat made with fresh, juicy peaches and a buttery topping. Perfect for gatherings, it’s a comforting dessert that is wonderfully simple to prepare and served best with ice cream or whipped cream.


Ingredients

  • 1.5 kg yellow peaches, peeled and cut into eight wedges
  • 1/4 cup caster sugar
  • 1 tsp cornflour
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1 1/4 cups plain flour
  • 1/3 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 85 g unsalted butter
  • 1/2 cup plain yoghurt
  • 1 tsp demerara sugar
  • 1/2 tsp cinnamon powder
  • Ice cream or whipped cream

Instructions

  1. Combine the peaches with sugar in a large bowl and let them macerate for 40 minutes to enhance their flavor.
  2. Preheat the oven to 210°C (410°F) during the maceration process.
  3. After maceration, drain the peaches, reserving the juices.
  4. In a bowl, mix 1/4 cup of the reserved peach juice with cornflour, salt, and lemon juice until well combined.
  5. Add the peaches to the syrup mixture, ensuring they are well coated, and adjust sweetness as necessary.
  6. Transfer the peach mixture into a medium baking dish and parbake for 12 minutes.

Notes

For a richer flavor, allow the peaches to macerate longer than 40 minutes.
Feel free to mix in other fruits for a fruit medley cobbler.
Serve with your choice of ice cream or whipped cream for added indulgence.
