- 1 cup quick cooking oats
- 1 tablespoon chia seeds
- 1 cup milk
- 1.5 teaspoons vanilla extract
- 2 tablespoons maple syrup
- 1 cup chopped peaches
- ½ cup rolled oats
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- ¼ teaspoon ground cinnamon
- Plain Greek yogurt
Instructions
- Preheat the oven to 375ºF. Prepare the crumble topping by mixing oats, maple syrup, coconut oil, and cinnamon in a bowl until it forms a crumble.
- Transfer the mixture to a small baking sheet and bake until golden brown, about 7-10 minutes, tossing halfway through. Remove from oven and set aside.
- In a small saucepan, combine all ingredients for the oatmeal and turn heat to medium/high.
- Bring to a boil. Then, reduce heat to low and stir continuously for 3-5 minutes until the oatmeal cooks and thickens.
- Serve topped with the crumble and a dollop of Greek yogurt.
Notes
Feel free to use fresh or frozen peaches based on availability.
For a sweeter oatmeal, add more maple syrup or honey to taste.
