Description

This Peach Cobbler Oatmeal combines the sweet flavor of peaches with hearty oats for a comforting breakfast. Quick to prepare and oh-so-delicious, it’s perfect for those who crave homemade goodness.


Ingredients

  • 1 cup quick cooking oats
  • 1 tablespoon chia seeds
  • 1 cup milk
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup chopped peaches
  • ½ cup rolled oats
  • 1 tablespoon maple syrup
  • 1 teaspoon coconut oil
  • ¼ teaspoon ground cinnamon
  • Plain Greek yogurt

Instructions

  1. Preheat the oven to 375ºF. Prepare the crumble topping by mixing oats, maple syrup, coconut oil, and cinnamon in a bowl until it forms a crumble.
  2. Transfer the mixture to a small baking sheet and bake until golden brown, about 7-10 minutes, tossing halfway through. Remove from oven and set aside.
  3. In a small saucepan, combine all ingredients for the oatmeal and turn heat to medium/high.
  4. Bring to a boil. Then, reduce heat to low and stir continuously for 3-5 minutes until the oatmeal cooks and thickens.
  5. Serve topped with the crumble and a dollop of Greek yogurt.

Notes

Feel free to use fresh or frozen peaches based on availability.
For a sweeter oatmeal, add more maple syrup or honey to taste.
