- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp cornstarch

- 1 cup brown sugar, packed light brown sugar

- 1 tsp pure vanilla extract
- 1 tsp honey
- 2 large eggs, room temperature
- 2 tbsp unsalted butter, melted
- 1/2 cup white granulated sugar
- 2 tsp ground cinnamon
- 4 peaches, 1 lb cubed
- 2/3 cup brown sugar, light brown sugar packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- In a medium bowl, mix the flour, baking soda, cinnamon, cornstarch, and salt together. Set aside.
- In a large bowl, beat the butter, brown sugar, and granulated sugar on high speed for 2 minutes until pale and fluffy.
- Add the eggs, vanilla, and honey; mix on medium speed until well combined. Gradually add the dry ingredients and blend on low speed until just mixed.
- Preheat the oven to 350℉ and line two cookie sheets with parchment paper. Let the cookie dough rest for 10 minutes to reduce spreading.
- Using a large cookie scoop, place 6 dough balls on each cookie sheet.
- Bake for 12-14 minutes, or until the edges are lightly golden. After 2 minutes, press the center of each cookie with a teaspoon to create an indent.
- Transfer the cookies to a wire rack to cool completely.
Notes
Make sure the peaches are ripe for the best flavor.
For a twist, add some chopped nuts or chocolate chips to the dough.
