This Peach Blueberry Cobbler is a delightful combination of sweet peaches and blueberries, baked in a buttery crust. It’s easy to prepare and a perfect dessert for any occasion that will satisfy your sweet tooth and impress your guests!

- 4 cups sliced peaches
- 1 1/2 cups blueberries
- 1 tablespoon fresh lemon juice
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter
- 1 cup white whole wheat flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 3/4 cup milk
Instructions
- Add peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt to a saucepan. Cook on medium heat until sugar dissolves, about 2-3 minutes, stirring often.
- Remove from heat and stir in the vanilla. Set aside.
- Cut butter into pieces and place in a 9×13 baking dish. Put the dish in the oven to melt the butter while preheating to 350° F.
- In a mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually pour in milk while stirring until just combined.
- Remove the baking dish from the oven and pour the batter over the melted butter, smoothing it into an even layer.
- Spoon the fruit filling and juices over the batter, optionally topping with turbinado sugar.
- Bake at 350° F for 35-40 minutes or until the top is golden brown. Let cool for 5 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream for an extra treat.
Store leftovers covered in the refrigerator for up to 3 days.
Reheat individual portions in the microwave for a quick dessert.
