Description

This Peach Blueberry Cobbler is a delightful combination of sweet peaches and blueberries, baked in a buttery crust. It’s easy to prepare and a perfect dessert for any occasion that will satisfy your sweet tooth and impress your guests!


Ingredients

  • 4 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk

Instructions

  1. Add peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt to a saucepan. Cook on medium heat until sugar dissolves, about 2-3 minutes, stirring often.
  2. Remove from heat and stir in the vanilla. Set aside.
  3. Cut butter into pieces and place in a 9×13 baking dish. Put the dish in the oven to melt the butter while preheating to 350° F.
  4. In a mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually pour in milk while stirring until just combined.
  5. Remove the baking dish from the oven and pour the batter over the melted butter, smoothing it into an even layer.
  6. Spoon the fruit filling and juices over the batter, optionally topping with turbinado sugar.
  7. Bake at 350° F for 35-40 minutes or until the top is golden brown. Let cool for 5 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat.
Store leftovers covered in the refrigerator for up to 3 days.
Reheat individual portions in the microwave for a quick dessert.
