- 2 boneless skinless chicken breasts cut in half lengthwise
- ¾ cup grated parmesan cheese divided
- ½ cup shredded provolone cheese
- 6 tablespoons unsalted butter melted and divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt or to taste
- ½ teaspoon pepper or to taste
- ½ cup panko breadcrumbs
Instructions
- Preheat a grill pan over medium-high heat.
- In a small mixing bowl, combine 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper. Brush the chicken breasts with this mixture.
- Place the chicken on the grill pan and cook for 3-4 minutes, then flip them over.
- In another mixing bowl, combine ½ cup of parmesan cheese and provolone cheese.
- Top the chicken with the cheese mixture and grill for an additional 3-4 minutes until the internal temperature reaches 165°F.
- Remove the chicken and place it on a foil-lined baking sheet.
- Preheat the oven’s broiler on high.
- In a separate bowl, mix panko breadcrumbs with the remaining ¼ cup parmesan cheese and 2 tablespoons melted butter, then sprinkle it over the chicken.
- Broil for 1-2 minutes until the breadcrumbs are golden and crispy, watching closely to avoid burning.
- Let the chicken rest for 5 minutes before serving.

For added flavor, consider marinating the chicken breasts before grilling.
