Description

This Pan-Seared Cod with Tomato Basil Sauce is a simple yet flavorful dish. With fresh tomatoes, aromatic garlic, and a splash of white wine, it’s perfect for a quick and healthy meal.


Ingredients

  • 2 tablespoons (28ml) olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 3 large cloves of garlic, finely minced
  • 1 pint juicy cherry tomatoes, sliced in half
  • 1/4 cup (57ml) dry white wine
  • 1/2 cup fresh basil, finely chopped
  • 2 tablespoons (28ml) fresh lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1/2 teaspoon salt (more to taste)
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon fresh ground black pepper (more to taste)
  • 2 tablespoons (28ml) olive oil
  • 1 and 1/2 pounds fresh cod, cut into 4 fillets
  • salt and pepper

Instructions

  1. Warm olive oil in a large sauté pan over medium heat.
  2. Add crushed red pepper flakes and garlic, sauté for 1 minute until fragrant.
  3. Stir in cherry tomatoes and cook for 8 to 12 minutes until soft and blistered.
  4. Pour in white wine, bring to a gentle simmer, and add basil, lemon juice, lemon zest, salt, sugar, and pepper; cook for 2 minutes.
  5. Taste and adjust seasoning as desired, then set sauce aside in a bowl.

Notes

Use more white wine if you prefer a saucier sauce.
Adjust seasoning to taste according to your preference.
This sauce pairs excellently with grilled or baked cod.
