Ingredients

Scale
  • 2 cups sugar
  • 1/2 cup butter softened or cut into slices
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1/8 teaspoon salt
  • 1/2 cup peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups quick cooking oats

Instructions

  2. Gather and measure all ingredients as the process goes quickly.
  3. In a large saucepan, mix the sugar, butter, milk, cocoa powder, and salt.
  4. Place the saucepan over low heat and stir frequently until the butter melts.
  5. Increase heat to medium until the mixture boils, then boil for 1 minute, using a timer to avoid overcooking.
  6. Remove from heat, and stir in the peanut butter and vanilla, followed by the oats.
  7. Using a cookie scoop, place the mixture onto the parchment-lined sheet pan.
  8. Allow the cookies to cool completely and refrigerate to speed up cooling before storing.

Make sure to measure ingredients accurately for best results.
For variations, add nuts or chocolate chips to the mixture if desired.
Store cookies in an airtight container at room temperature for freshness.
