Ingredients

  • ¾ cup (93g) all purpose flour
  • ¾ cup (64g) quick cook oats
  • ¾ cup (150g) packed brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons (78g) cold unsalted butter, diced
  • ¼ teaspoon salt
  • 1 pound strawberries, hulled and sliced
  • 2 cups blueberries, frozen or fresh
  • ½ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons (24g) cornstarch

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the crumble by mixing flour, brown sugar, oats, cinnamon, and salt in a large bowl. Cut in the cold diced butter until the mixture resembles small crumbs. Set aside.
  3. In another large bowl, combine strawberries and blueberries. Add granulated sugar, lemon juice, and cornstarch, tossing gently to coat. Transfer to the bottom of an 8-inch square pan.
  4. Spread the crumble mixture evenly over the berry mixture and gently press down to compact it.
  5. Bake for 30-33 minutes until the topping is golden and crunchy. Allow to cool slightly before serving warm or at room temperature with whipped cream or ice cream.

Allowing the crisp to cool slightly before serving helps the fruit juices thicken.
Feel free to use frozen berries if fresh ones are unavailable.
