Description

These Mini Trifles are a delightful treat combining the freshness of strawberries and blueberries with the creaminess of mascarpone and whipped cream. Perfect for parties or a sweet snack, this recipe is not only quick to assemble but also sure to impress your guests with its vibrant flavors and beautiful presentation.


Ingredients

  • 1 ½ cups (339g) unsalted butter, at room temperature
  • 3 cups (570g) granulated sugar
  • 5 large eggs, at room temperature
  • 1 teaspoon (5ml) pure vanilla extract
  • 3 cups (420g) sifted all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups whole milk, at room temperature
  • 6 cups strawberries, chopped
  • 2 ½ cups small blueberries
  • 1 cup granulated sugar
  • 16 ounces mascarpone cheese, cold
  • 2 ½ cups (592ml) heavy whipping cream, cold
  • 1 ¼ cup (163g) powdered sugar
  • 1 teaspoon (5ml) pure vanilla extract

Instructions

  1. Preheat the oven to 325°F and generously grease two 5×9” loaf pans.
  2. Let the butter, eggs, and milk come to room temperature.
  3. Cream the butter and sugar together for several minutes until light and fluffy.
  4. Add the eggs one at a time, ensuring each is well mixed before adding the next. Mix the vanilla extract with the last egg.
  5. In a separate bowl, sift the flour and then measure out 3 cups, adding baking powder and salt. Mix half the dry ingredients with half the milk until just combined, then add the remaining ingredients and continue beating until well combined.
  6. Divide the batter between the loaf pans and bake at 325°F for 60-70 minutes, checking for doneness with a toothpick. Allow to cool for at least 30 minutes before removing from pans and then let cool completely before slicing.

Notes

For best results, ensure all ingredients are at room temperature before starting.
You can substitute with other berries for a different flavor profile.
These trifle layers can be assembled in advance for easy serving at gatherings.
