These Meal Prep Breakfast Burritos are packed with flavor from eggs, cheese, and your favorite meats and veggies, making them a quick and convenient breakfast option.
Ingredients

- 1 lb meat, chicken sausage, bacon, ground beef, etc.
- 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
- Pinch salt
- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Cook the meat in a medium skillet over medium heat until fully cooked; transfer to a bowl.
- In the same skillet, sauté the chosen vegetables along with a pinch of salt until soft, about 3-5 minutes.
- Whisk together the eggs and cottage cheese in a large bowl with some salt and pepper. Add the egg mixture to the skillet and scramble until cooked.
- Assemble the burritos by placing one tortilla flat, adding ¾ cup of the egg mixture, followed by 2 tablespoons of meat and 2 tablespoons of cheese.
- Fold in the sides of the tortilla and roll it up, repeating until all ingredients are used.
- To make in advance, wrap each burrito in foil, place them on a baking sheet, and freeze. Transfer to a bag when frozen to prevent sticking. Will last up to 2 months.
- Alternatively, refrigerate wrapped burritos for up to 1 week.
- To reheat, warm in the microwave or bake at 375°F for 15-20 minutes.
