This Leprechaun Pistachio Fudge is a quick and delicious treat made with white chocolate, Irish cream, and crunchy pistachios. Perfect for satisfying your sweet cravings with minimal effort!

- 3 ½ cups white chocolate chips (22–24 ounces)
- 14 ounces sweetened condensed milk
- ¼ cup irish cream
- 1 cup shelled pistachios roughly chopped
Instructions
- Line an 8-inch × 8-inch baking dish with parchment paper or tin foil, allowing it to hang over the sides for easy removal later.
- In a microwave-safe bowl, pour in the condensed milk and heat for 1 minute.
- In a large glass bowl, add white chocolate chips and pour the warm condensed milk over them. Let it sit for 1-2 minutes, then stir until the chocolate melts and combines with the milk. If necessary, microwave for another 15 seconds and stir again.
- Stir in the Irish cream until fully integrated. This may take a couple of minutes. Mix in 3/4 of the chopped pistachios until combined.
- Pour the fudge mixture into the prepared pan, then sprinkle the reserved pistachios on top and gently press them down into the fudge.
- Refrigerate the fudge for 3 to 4 hours or until it's firm. Once set, lift it out of the dish, remove the foil or paper, and cut into 25 squares. Store in an airtight container in the refrigerator.
Notes
For easier slicing, ensure the fudge is fully chilled before cutting.
Use high-quality white chocolate for the best flavor.
Feel free to substitute the Irish cream with a non-alcoholic version if desired.
