Ingredients

  • 8 ounces spaghetti
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 3 garlic cloves minced
  • zest of one lemon
  • juice of one lemon
  • 1/2 teaspoon kosher salt
  • dash freshly ground black pepper
  • 1/3 cup grated parmesan cheese

Instructions

  1. Bring a large pot of water to a boil and add the salt.
  2. Cook the spaghetti according to the package instructions. Before draining, reserve 1 cup of pasta water.
  3. While the pasta cooks, heat a large skillet over medium heat and melt the butter.
  4. Add the minced garlic and lemon zest to the skillet, cooking for about one minute until fragrant.
  5. Stir in the lemon juice, 1/2 cup of reserved pasta water, salt, and pepper, whisking everything together.
  6. Add the cooked spaghetti to the skillet and toss to combine with the sauce.
  7. Incorporate the grated parmesan cheese, tossing until well mixed. If the pasta is sticky, add a bit more reserved pasta water until the sauce is smooth. Taste and adjust salt and pepper as needed.

Notes

For added flavor, consider using fresh herbs like basil or parsley as a garnish.
Make sure to reserve some pasta water to help create a creamy sauce texture.
Serve immediately for the best flavor and texture.
