- 4 tablespoons unsalted butter
- 3 garlic cloves minced
- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Bring a large pot of water to a boil and add the salt.
- Cook the spaghetti according to the package instructions. Before draining, reserve 1 cup of pasta water.
- While the pasta cooks, heat a large skillet over medium heat and melt the butter.
- Add the minced garlic and lemon zest to the skillet, cooking for about one minute until fragrant.
- Stir in the lemon juice, 1/2 cup of reserved pasta water, salt, and pepper, whisking everything together.
- Add the cooked spaghetti to the skillet and toss to combine with the sauce.
- Incorporate the grated parmesan cheese, tossing until well mixed. If the pasta is sticky, add a bit more reserved pasta water until the sauce is smooth. Taste and adjust salt and pepper as needed.
Notes
